  • Roast your sweet potatoes. Drizzle the cubed sweet potato with a little olive oil and roast it up.
  • Make the dressing. While the sweet potato is roasting you can whisk together all of the ingredients for the tahini dressing.
  • Massage the kale. Add the dressing to your kale and toss it all together well with my tips above!
  • Add your toppings. Gently toss in the rest of the ingredients except the pistachios.

    This Tuscan Kale salad with apples and cheddar is delicious for an easy lunch, a side for dinner, or it can even be dinner all on its own! It’s healthy, crunchy, and so flavorful! It’s tossed with a homemade apple cider vinaigrette that provides the perfect acidity to the kale and apples.

    I’ve been really into this Tuscan kale salad lately. Luckily, so has Josh. I got this idea for the salad from a dish I had at Flower Child. They have a kale salad there that is one of my favorite salads I’ve ever eaten. It is SO good, and it has kale, apples, cheddar, almonds, and some other items. However, I kept mine simple and just stuck with the kale, apples, cheddar, and a homemade apple cider vinaigrette.

    Luckily, it’s still so fantastic, even with the pared down ingredient list. This is my husband’s favorite salad. He requests it on his birthday, and always says he would eat it several times a week.

    And I can’t blame him. The kale always is so hearty, the apples crisp and sweet, and the cheddar cheese just brings that little something extra. All that paired with the homemade apple cider vinaigrette just makes this salad so craveworthy.

    If youre looking to meal prep this salad or serve it at a later date, feel free to chop your kale, roast the sweet potato, mix up your dressing and even make those pistachios ahead of time! The kale, dressing and sweet potato cubes can be kept in the fridge while everything else can be kept at room temp until ready to toss together and serve.

    That being said, the salad can also be tossed together ahead of time too if you prefer to do this its great even a few days later! I recommend just leave out the avocado until ready to serve.

    How To Make Apple Cider Vinaigrette

    1. Combine. Add the ingredients to a bowl or glass mason jar with a lid. I typically use a 12-ounce jar, so theres room to stir everything together.

    For extra-finely minced garlic, try scraping it over a microplane. That way you wont have any large chunks in the final dressing.

    You can start with only 1 tablespoon of honey if you like a more tart dressing, but I usually add 2 tablespoons in total.

    2. Mix. Use a whisk to stir the ingredients together smoothly, or attach the lid to your jar and shake well.

    Alternatively, you can add all of the ingredients to a blender and blend until smooth. Either way works.

    3. Enjoy! Taste the dressing and adjust any seasoning, to taste. You can add more sweetness by adding extra honey, or add more mustard or vinegar to make it taste more tangy.

    Serve it over your favorite veggies, and add any extra toppings you like. I think this delicious dressing goes well over a Fall salad, particularly with cranberries and pecans on top.

    This apple cider vinegar salad dressing can be stored in an airtight container in the fridge for up to 5 days. Its normal to see it separate in the fridge, so be sure to shake it again before using.

    Note: Extra-virgin olive oil may thicken when chilled, so dont be alarmed if your dressing becomes very thick when you store it. You can run the jar under hot tap water until it thins out again, or let it come to room temperature on the counter before you plan on serving it again.
